The increase in the harvesting of ice and exportation across countries therefore meant the shift in the traditional method of food preservation. Traditionally, the most common methods were salting and drying as well as smoking particularly applied to meat and other animal products. There was shift of preservation from these traditional modes to the use of ice in the ice rooms or cooler boxes to keep meat fresh for longer.

The use of ice in ice rooms to preserve food until the arrival of the domestic refrigerator using the ice box. This was wooden box with appropriate insulation with a block of ice placed at the top hence keeping the refrigerator cool. This was one of the most efficient ways of keeping food fresh. The domestic refrigerator allowed people to now preserve food at home without having to necessarily rely on food from the ice rooms. This innovation meant family could then store larger amounts of food at home and not go for meat from the ice rooms when they needed to cook, a positive change in the society.

The domestic refrigerator persisted over a period of 15 years until it was overtaken by the domestic mechanical refrigerator. This proved to be more efficient and less time consuming as compared to the domestic refrigerator. It meant the families never had to again go around looking for ice blocks to put onto of the refrigerator since the mechanical refrigerator could create a cold environment within itself using the compressors and the refrigerants used in making it. This was a solution that greatly changed the way families in the U.S.

stored their food and the culture of having abundant food at home cropped up steadily. By 1949 there were about 7 million domestic refrigerators manufactured, this immense number can attest to the vast cultural shift that gripped America and the world at large when it comes to food preservation. This meant that in this period more Americans had to change their culture on food choices since they had a lot of variety of foods stored within their homes thanks to the refrigerators.

It can also be observed that refrigeration brought the distant centers of production together particularly in the food processing industry as the processing and storage of meat can now be done at the same site. It also broke the geographical barriers of weather difference between the North and the south and blended the two parts of America. Generally, the refrigeration evolution saw an immense change and stability in the fish industry, brewing, meat as well as dairy industry.
